Your fuel gauge example makes sense to me. The speedometer, though...a flat number wouldn't convey much about acceleration or deceleration. I'm pretty sure your brain processes the sweep speed (along with lots of other inputs) and uses that to help you decide how hard to mash the brake or accelerator. Some older cars that did have a digital speedo also included a bar graph to help show that.
